With every entree, a vegetable side dish can be added. Here are many different options. For the most part I first chop, slice, or cube my vegetables, place in the dish and add olive oil, salt, pepper. If you want your vegetables to be soft then cook them in the oven covered with foil or sautéed in a skillet.
For this dish I added dried oregano

Sautéed onions created the flavor for this dish
These vegetables were heavily spiced with turmeric, paprika, cumin, garlic powder, and roasted in the oven without a cover.
