For the egg rolls place the following items into a bowl and mix well
cubed avocado
chopped sun dried tomatoes
chopped red onions
chopped fresh cilantro
I use already made egg roll wrappers, place a spoonful of the mixture in the middle of the paper and roll the sides in first and then the rest.
In a small pot boil oil and drop each egg roll in one by one making sure to roll and cook each side of the egg roll, cut in the middle and serve with sauce.
Sauce

soy sauce
red chili flakes
sesame oil
rice vinegar
