I copied an old Taco Bell classic quesadilla recipe. I created a healthier and homemade version of it by using greek yogurt instead of sour cream. For the sauce I mixed Greek yogurt with siracha, cayenne pepper, minced garlic and red chili flakes. Spread the yogurt on the bread, top with shredded cheddar cheese and top with the other tortilla. Place the quesadilla in a skillet and cook, flipping once. Serve with extra sauce and top with fresh cilantro.
