To cook the short ribs first sear both sides making sure to season with salt and pepper. I usually use a dutch oven to do the searing. Next I add in two bay leaves, half a bottle of red wine, paprika, cumin, fresh garlic, and place the peeled white potatoes around the beef. Once everything is placed in the pot, place the lid on top and place in the oven on 300 for 2 hours. Make sure you check on the dish every 45 minutes and pour the marinate on top of the beef to keep it moist.
