First I used some onions that I had sauteed in tumeric and cumin and layered the bottom of the tray. Next I created a marinate. For the marinate I first used one juice of a lime, teaspoon of honey, olive oil, paprika, cumin, tumeric, salt, pepper and some Italian seasonings. Mix everything together until the honey is mixed well and brush the chicken inside the skin and outside with the marinate. Layer the chicken on top of the onions. Bake on high heat, about 450 in the oven for 2 hours. After the 2 hours take off the foil and brush the chicken again with the juices that are in the dish. The onions will become a little sweet and the chicken is so oh so tender.

Fingerling Potatoes
Meatballs
So easy to make and the results are amazing. First I take my ground beef, throw it into a bowl, add in some cut up fresh flat leaf parsley, salt, pepper, tumeric, cumin, paprika and olive oil. For the tomato sauce I first saute onions, tomatoes, garlic and flat leaf parsley all together. Once the mixture is ready I next add in one can of tomato sauce. Once everything is done then I finally add in my rolled up meatballs. Serve with a side of pasta or rice!

Gondi Time!
For those of you who are not aware of what Gondi is, it is a Jewish Persian dish served during shabbot. It is a lot easier then most may think. You can visit any kosher market and find the Gondi mixture already pre made. This way you won't have to mix the ground chicken, grind up chickpeas and onions together. For the soup you will first need to saute one whole white onion with olive oil, tumeric and cumin. Next I add in water to fill about half the pot, add in some garbanzo beans and four dried lemons. Let the soup mixture sit for about 40 minutes. 20 minutes before serving add in your Gondi balls and salt, pepper. To make the Gondi balls just roll up small amounts of Gondi and throw them into the pot.

Hamburger Time
To prepare the patties I cut up some flat leaf parsley very finely. In a plastic container add in the ground beef, parsley and the following spices, cumin, paprika, salt + pepper. I also add in a little olive oil. Next I added in a little bit of bread crumbs to hold the mixture together as well as a egg. Make sure you mix everything really well, I use my hands and for best results I recommend you using your hands as well. Then you just want to form the patties and cook them on your stove top in a frying pan with some oil. Add in your favorite sauces and condiments and you have yourself a meal!

Healthy Side Dish for any meal
I love asparagus and I can honestly say a lot of people do as well. It's so healthy yet so delicious in flavor. For this side dish I simply placed one bunch of asparagus on a sheet of foil paper, make sure when you are preparing your asparagus that you bend the vegetable and where ever the break is thats what you will use, the rest of the stem is just hard and isn't appetizing anyways so why waste time cooking it. Next you want to drizzle some olive oil over the entire thing, cut up some fresh garlic and add that in as well, salt and pepper. Close up the foil bag and place in the over on 350 degrees for about 20 minutes!

Chinese Stir fry
So easy yet so filling. First you want to create a stir fry sauce, for the sauce I mixed in the following:
Using a little bit of each
Hoisin sauce
rice wine vinegar
sesame oil
fresh minced garlic
crushed red chili pepper
soy sauce
chili pepper
First I sauteed a a whole onion and included a few tablespoons of the sauce I made, next I added in some already boiled carrots, celery and broccoli. Continued by adding in some fresh sliced mushrooms, snow peas, baby corn and asparagus. In another frying pan I added in the remainder of the sauce and the one pound of sliced shoulder meat. Once everything is cooked I mixed in the meat and vegetables and let simmer for 15 minutes or so covered with the lid and lastly serve with some sticky white rice.

Spaghetti & Salad Dinner
This is such an easy and a yummy dinner anyone can pull off. First I used fettucini noodles, this gives the whole dish a different texture. I boiled the noodles on the stove, making sure to season the water with salt and olive oil. Next for the meat sauce I first sauteed some tomatoes and onions. Next I added in some cut up red bell peppers and minced garlic. Once the mixture is sauteed I added in about a half pound of ground beef. I seasoned the beef with some salt, pepper, tumeric and paprika. Lastly I had some softened up tomatoes in the fridge that I wanted to use so I cut them up and placed them into the pot, creating a home made red sauce of my own.
For the salad I decided that a chopped salad would go perfect with the heaviness of the pasta. So I chopped up some lettuce, tomatoes, onions and cucumbers. For the dressing I made a lemon vinaigrette. To do so in a tupperware container I add in some lemon juice, olive oil, salt, pepper, and lastly some dijon mustard. Once all the ingredients are in the container, put on the lid and shake it up until everything looks mixed together.
For the bread, I used what I had in the freezer to create a garlic bread. rub some fresh garlic cloves on the bread, drizzle a little bit of olive oil and sprinkle on some paprika, oregano, salt and pepper.

Israeli Dinner
One of my favorite dishes to make is schnitzel. It's pretty simple to make and the results speak for themselves. Visit you local kosher market, they usually have specific schnitzel chicken packaged. This chicken is usually pounded out and a lot thinner than regular chicken breast. Next you will need to beat a few eggs, the beaten eggs are used as a gluing component for the bread crumbs. You will next dip your chicken into the beaten eggs and next into the bread crumbs of your choice. I season my bread crumbs with different spices, feel free to use the spices you like. After all of your chicken has been dipped and coated with bread crumbs you will next want to fill a frying pan with some vegetable oil and fry all of your chicken. Make sure to place your cooked chicken on a paper towel before serving to get rid of some excess oil. For the roast potatoes I simply coated them with some oil, paprika, garlic, tumeric, salt + pepper and cumin.

Ahi tuna W/Orzo & Peas
This dinner is a very easy and delicious course you can make for yourself or guest. For the Orzo pasta you need to first boil some water, make sure to add in some salt and olive oil to flavor the pasta. Next you need to place some frozen peas on a frying pan until the peas are warm, followed by adding in one whole chopped tomato and some fresh minced garlic. The pasta will be ready once all of the water has evaporated, add in the pea mixture into the pot with the pasta, season with some salt, pepper, olive oil and paprika.
The Tuna steaks are extremely delicious and can be cooked based on your likings. I cooked my fish well done so it has an almost chicken like texture to it. In a ziplock bag add in some vegetarian hoisin sauce, rice wine vinegar, sesame oil, salt + pepper, and some cayenne pepper. Next smother the raw sashimi grade tuna with the marinate mixture. To cook the fish you simply need to put some oil on a frying pan and and place the tuna on the pan, flip over and cook both sides.

Fresh Pizza Made in 30 minutes Tops
The easiest way to go is by buying a store bought raw pizza dough. Trader Joes has a great selection of raw pizza doughs in various flavors. Make sure to spread some olive oil on a clean cookie sheet. Lay out your rolled out pizza dough and place just the plain rolled out dough in the oven for about 10 or so minutes until the dough is cooked and crisped. Next I sauce the pizza with some pizza sauce, add a thin layer of cheese and start by topping off my various veggies. I first did a layer of onions, tomatoes, bell peppers, fresh basil, green olives and another layer of cheese.
It's a great idea to use different types of cheeses and lastly drizzle some olive oil over the entire pizza. Bake in the oven on high heat for about 20 minutes. The results speak for themselves!

Steak With Cilantro & Garlic infused Mash Potatoes
For the mash potatoes I wanted to switch things up and try something new. In a food processor process some cilantro, garlic and oil until completely processed into a thick liquid. Next you want to boil your potatoes of choice in a pot, once boiled drain pot, but leave about a quarter cup of starchy water in the pot. Using a fork or hand masher, mash up all the water and potatoes and add the cilantro mixture. Leave the mash potatoes on the stove for about ten minutes so the flavors soak in and make sure to add salt and pepper to taste.
For the Steak I used a one pound piece of london broil since its a very soft meat. Using any type of deep frying pan I first seared the piece of meat with some oil, salt + pepper and flour. Make sure to sear meat on both sides. I next added in some cut up onions and a half bottle of red wine. Leave everything on the stove until the wine becomes a thick sauce. Occasionally flip over the meat and cover with a lid. Once cooked slice meat and serve. Dress the leftover sauce over the meat when serving.
For the snow peas I simply cooked them with some oil, salt + pepper, dash of soy sauce and a tablespoon of red sauce.
Here is the finishing dish!

Kosher Shabu!
Being Kosher I was never able to try this delicious manner of cooking. Shabu is a Japanese culinary dish which descended from the Mongolian tradition of nabemono, or 'one pot' cooking. In traditional shabu shabu, thin slices of beef are placed in a communal pot of boiling water and swished back and forth until cooked. Vegetables such as mushrooms, cabbage, watercress and spring chrysanthemums are also boiled briefly and dipped in various sauces.
I put together some vegetables that would work well with this dish, carrots, Napa cabbage, enoki mushrooms. Next I processed garlic and onion. You can always sprinkle some cilantro and green onions on your soup. For the meat you want to freeze it the night before and thinly slice it. For the broths you can choose any kind. I used a beef broth for one pot, mushroom for another and lastly made a spicy soup. For this recipe you can go any way with whatever you choose to make. You can add rice or various types of noodles to your soup. As far as the sauces go, I made a ginger sauce using lime juice, sesame oil and some soy sauce. You can make various sauces based on what you like best.
Here are some pictures from my Shabu experience. Take this as a reference and create your own magnificent masterpiece.

At this point all of the ingredients are mixed in and cooked, so you may add in one can of tomato sauce. After everything is mixed together add in some salt + pepper, a little touch of cumin, paprika and some cayenne pepper to give it some spice. To prepare the okra for this dish you want to wash them very well, I used fresh okra, but you can also use frozen. Yummy Mexican Rice Bowl
For the first part of the dish you want to make your cilantro rice, to do so I used a rice cooker, cooked the rice and of course seasoned the water with oil and salt. Once the cooker is finished cooking the rice I used a food processor to process one batch of cilantro. For the Guacamole salsa I used a blender to mix everything together. In a blender add in lime juice from 2 whole limes, one avocado, quarter of one batch of cilantro, half a red bell pepper, half an onion, salt and pepper. To make the salsa spicy add in a serrano chile.
In order to make the red salsa, use a food processor and process tomatoes, cilantro, garlic, onions, lime juice, salt + pepper. If you want to make it spicy add in some hot chiles.
Lastly, I used some steaks I had leftover from before that were grilled on the BBQ. Chopped up the steaks into cubes and added it to my mixture. For the mixture I first sautéed some red bell peppers and onions with some olive oil, salt + pepper. Next I added in one can of crushed tomatoes. Let the mixture cook for about 15-20 minutes. Persian Version
Here is the easiest way to explain to you all how to make a Persian Choresh or Stew. First you want to wash and chop about 3 bundles of parsley and a few cloves of chopped garlic and throw into your frying pan that is coated with oil. Fry ingredients until they are tender. Next you want to boil a half full pot of water. Once boiled, add in the fried parsley and garlic. Next you want to add in chopped celery. You want to also add in about a tray of cubed stew beef and a half of a chopped onion. For the spices you want to include a tablespoon of dry mint, tumeric, cumin, salt + pepper. For that sour persian flavor all you Persian food lovers add in a few dried lemons that are available at any of your local persian market. For best results you want to poke holes into your dried lemons with a knife. Once cooked let the pot simmer for about 3 hours, the longer the stew cooks the better it will taste and the softer the meat will be.
Here I substituted Red Kidney Beans for Meat to make the dish vegetarian. Everything else is the same just hold the meat and add in the beans of choice. Of course in this situation the dish can be made within an hour or so.

Everyone loves a good Pasta!
To start off boil your pasta of choice, I used linguini. Make sure to season your water with oil and plenty of salt, you could even include some garlic cloves for a little extra garlic flavor. For the sauce I first sauteed some garlic and onions in some olive oil. Next you want to add in some fresh chopped tomatoes and a can of tomato sauce. Lastly add in your ground beef. Be sure to season your beef with an Italian seasoning that includes all of the dried basil, oregano and other spices. I next added salt+ pepper. Once your meat sauce is ready top off with some fresh chopped basil.
A great side to this dish is some garlic bread. For the bread I used some sliced bread, any kind will do. In a blender mix in some garlic, dried oregano, salt + pepper and lots of olive oil. Once completely processed brush on your mixture onto the bread slices and place them in the oven on low heat for about seven minutes or until ready.

Picnic for two...
Using the leftover chicken I made from the previous blog posting I created mini sandwiches. I first toasted my mini baguettes and lightly spread mayonnaise on both sides of the bread, added some lettuce and included the cut up oven roasted chicken I had that was sitting in my refrigerator. You can include any of your favorite sandwich toppings and substitute mustard or ketchup for mayonnaise. For the salad portion of my picnic I included a cabbage slaw, which consists of lemon juice, salt + pepper, green and purple cabbage and cilantro. For the other salad I just included some romaine lettuce, tomatoes, salt + pepper and placed a half a lime in the container. It is easier to use disposable containers so you don't have to worry about transporting empty containers. To finish off the meal I included a drink and fruit. Hope you find these helpful hints a fun way to incorporate different dishes to your picnic of choice.

Bring on the Chicken
Easy as 1,23. Visit your local grocery store and ask you butcher to break down one whole chicken. After washing your chicken pieces place your pieces on an oiled baking tray. For the seasoning combine cumin, paprika, tumeric, salt + pepper, half a teaspoon of honey, lime juice from one lime, oil, and cayenne pepper. Make sure to mix all spices well enough until the honey mixes with the entire mixture. Using a brush, brush your mixture onto the chicken pieces. Cook in the oven for one hour on 350 degrees or until fully cooked. You want to rub your chicken for the second time with the same mixture about 20 minutes before serving so its nice and not dried out.
The Perfect side dish to accompany this chicken is roast potatoes. Just follow the easy steps, wash and cut your potatoes of choice and throw them into a large mixing bowl. Sprinkle some paprika, tumeric, cumin, salt +pepper, oil, garlic pepper and a little bit of cayenne pepper. You can place your potatoes in the same baking sheet as your chicken or you can cook them separately. If you cook them separately cook potatoes for about 40 minutes on 350 degrees. The exact time for cooking your potatoes will depend on how large your potatoes are cut.
