Here are the directions for the Shirazi Salad:
You want to chop the following ingredients:
onions
tomatoes
cucumbers
After all of your ingredients are chopped into cubes you want to add in some lemon or lime juice, olive oil and a spoon full of dried mint, if you choose to use fresh mint make sure to finely chop the mint for best result. Add in Salt + pepper according to taste.
For the soup you want to first sauté one whole onion, spoon full of minced garlic, cubed tomatoes and some celery. After the ingredients are translucent you want to add in half a pot of water. Next add in your vegetables of choice. I used asparagus, zucchini, celery, potatoes, broccoli, squash and carrots. After I added in a half of a small can of tomato paste, teaspoon of olive oil, salt + pepper. I chose to add in some couscous pasta, but you can use any type of pasta or not.
For the Croutons you can use any old bread you have in your pantry. I used ciabatta bread and cubed a few slices of it and mixed in some olive oil, oregano, paprika, tumeric, salt + pepper, and a touch of cayenne pepper.
