Farmers Market Fare

I visited the Studio City farmers market a few weeks back and created different dishes using several key ingredients. For the Cheese plate I arranged some Lemon Basil ( a first for me) heirloom tomatoes, asiago cheese. For the orzo pasta I boiled some orzo with olive oil, salt, threw in some of the delicious tomatoes, lemon basil, capers and shredded asiago cheese. For the bread I toasted sliced artisan sourdough bread with olive oil, paprika, shredded asiago cheese, garlic and crushed red paper. Its always a great idea to use a few items and build from there. Always be open to trying new ingredients. The lemon basil was a first for me and a great new experience.

Moroccan Breakfast

Shakshuka

Cut up one jalepeno, one green pepper, one red pepper, half a teaspoon of cumin, a few cloves of garlic, and saute in a frying pan with some olive oil. Next open up one can of stewed whole tomatoes and add into pan. Once all the items are cooked begin to break up the tomatoes and add in one whole cut up white onion. I added in crumbled soy chorizo, but you can skip that or add in meat options. Once everything is broken down and it is almost like a sauce you can add in a few eggs cover with a lid and once the eggs are cooked you can serve with some bread. This is a very filling dish that can be served in the morning or any time of the day!

Yellow Chicken Curry

At the Asian market you can find yellow curry, Add in a few spoons of the paste, one can of coconut milk, cooked carrots and potatoes into a sauce pan. Next I used chicken breast, so I placed in the whole chicken breast that was butterflied. Once semi cooked take chicken out of pan and slice chicken and place back to pot with everything. Mix thoroughly and add in some cumin seeds. Serve with a side or sticky rice and garnish with green onions or cilantro.

Asian Spicy Beef Soup

At your local Asian store grab some beef stew seasoning. Its vegetarian and great to use for soups. Using one and a half tablespoons of the seasoning, half a teaspoon of spicy chili seasoning, sliced garlic, sliced carrots, cubed potatoes and cubed minute roast meat. Cook for 40 minutes and the soup is ready. If you would like to add noodles of your choice you can, sliced red onions, sliced green onions, sliced jalepenos.

Shabbat Dinner

For the Dinner I combined various recipes on my blog. I used the Persian Celery stew, Rice with tadig, chicken legs with roast potatoes and butternut squash cubes.

Marinate Brussels Sprouts

When people think sprouts they think flavorless green foods. However using the right seasonings you can make any greens flavorful. Wash and cut in half the sprouts, in a bowl mix together oil, salt, pepper, sirarcha, chili sauce and rice vinegar. Place in the oven on a foil tray for 45 minutes on 350. For the first 30 minutes cover the sprouts with foil.

Healthy Roasted Chick peas

Drain all the juice out of one can of chick peas. Next in a bowl mix some olive oil, cumin, salt, pepper, paprika, tumeric. Once mixed lay on a foiled cookie tray and place into the oven on 350 for 20 minutes until the peas are a bit crispy. A great healthy snack, would also be great in salads!

Breaded Sole with a lemon caper sauce

First for the sauce on the stove top I sauteed some capers, a few cubes of butter, 4 sprigs of Fresh thyme, and a few squeezed lemons.

For the fresh I used my usual bread crumbs mixed with some paprika. First coat fish into flour, next some beaten eggs and lastly in the bread crumbs. Using a large frying pan fry fish on each side for about 6 minutes or so on medium heat. You will noticed once the fish is cooked.

Underneath I placed some buttered purred mash potatoes.

Yummy Girls Dinner

Since we were having a girls night we decided to do some Moscato wine, What better to pair dairy appetizers with. A co-worker of mine brought me the largest zucchini I have ever seen in my life. I scooped out the inside and added in the rice and feta cheese mixture I created. For the mixture I first cooked a cup of rice with a few spoons of tomato sauce, fresh Thyme, sauteed onion, tomato, garlic with crumbled feta cheese. Place into the oven first just the zucchini with some oil and salt for 30 minutes on 300 and then the stuffed zucchini on 350 for another 30 minutes. The results are amazing. You can use any squash of your choice and any filling.

For the goat cheese dough bites I used a pre-made dough from Trader Joes, topped it off with some herbed goat cheese and balsamic reduced red onions. These were a favorite, the taste of the goat cheese with the sweet onions are just delicious together.

I paired this dinner with an assembled cheese plate, mozzarella balls, a large salad, my olive tapenade.

Learn how to make bread

First I used a 2 pound bag of white all purpose flour, next I added in one package of instant dry yeast, next one teaspoon of salt. Knead everything together and set the bread aside with a paper towel on top to give the dough to rise. Once it rises you can create shapes of bread of your choice. For the Topping I minced garlic, rosemary and melted margarine. Spread the mixture on top of the bread and place into the oven for 30 minutes on 350. Depending on your oven you might need to cook bread longer for brownish color to appear.

Cheese & Bread

Below you can see various cheeses as well as a rosemary and garlic infused crostini. First I rubbed garlic cloves on the bread pieces, next with a spoon I placed some oil that had been seasoned with fresh rosemary, garlic powder, salt, pepper, paprika. Place into the oven on 350 for about 6 minutes flip over for another 3 minutes.

Asiago Cheese and Garlic crostini

First rub garlic cloves with oil on the bread slices, next shred rosemary asiago cheese on top of the bread, mince the leftover garlic and place on top of bread, place into the oven for 10 minutes on 350.

Chicken Pot Pie

In a large pot create a soup by adding veggies of choice, I used some carrots, celery, peas, potatoes, Chicken Cubes, Veggie stock, salt, pepper, fresh flat leaf parsley, garlic, then add a few spoons of flour to thicken soup, dump soup into tray and top off with some puff pastry dough. One box comes with two sheets so I actually made two pot pies. Brush with egg wash and Place in oven for about 45 minutes.

Acorn Squash Soup

First pick your squash of choice, I used an acorn squash, but this can be made with any type. Roast in oven for about 30 minutes then remove insides and place into pot of boiling water, add a few spoons of chicken consume, salt, pepper, and cook on stove for 20 minutes, Using a hand blender blend everything and its ready!

Acorn Squash Soup

Indian Veggie Samosas with Fresh Mint Chutney

First lets cook the filling. Peel, boil and cut potatoes, Next saute one white onion in a pot with cumin seeds and tumeric, next adding in the cubed potatoes and one can of peas. Keep cooking on low heat for about 10 minutes. Place egg roll wrapper on flat surface and fill with one spoon of mixture. The way you close the samosa does not really matter so be creative, but making sure each corner is sealed with egg wash. Bake in oven on an oiled tray for about 20 minutes on 350.

For the mint chutney place the following in blender: 1 batch of fresh mint, 2 batches of fresh cilantro, a half a jalepeno, some lemon juice.

Breakfast Sandwich

Toast your bread of choice, spread some cream cheese on both sides, add a slice of red onion, some lox, guacamole, scrambled eggs that were cooked with paprika, tumeric, cumin, onions, tomatoes. Simple, but soooo flavorful!

Breakfast Hash all in One!

First Shred skinless potatoes of your choice, I used rustic potatoes. Next season shreds with paprika, tumeric, oil salt and pepper and place in tray, Next saute some tomatoes and onions and add to mixture lastly adding some shredded spinach leaves. You can add this step at the last 10 minutes of cooking. Top off with a few eggs and place into oven on 350 for about 20 minutes or until cooked.

Salmon in the Oven

First you want to oil the tray your using or what I think is better is to foil the entire thing for easy removal. Place salmon down and top off with some oil, paprika, lemon zest, minced garlic, pepper, salt. You can place some of your favorite veggies on the sides. I used baby zucchini and crimini mushrooms. Place in the oven for about 30 minutes covered with foil and then take foil off for another 15 minutes depending on the thickness of the salmon.

BBq Eggplant Bruschetta

First salt and oil rounds of eggplant, Next place eggplant rounds on bbq and allow to cook, should take less then 10 minutes. For the toppings you can always mix it up, add or take out certain items. I used cubes of feta cheese, kalamata olives, capers, different colored heirloom tomatoes, olive oil, salt and pepper. once eggplant cools top each off with mixture! Your guest will be amazed by this beautifully colored appetizer.

Party Food!

So back in February I wanted to throw a dinner birthday event at my house. I wanted to make it intimate so I only invited a small group of friends and cooked the entire food feast. First off I had a few varieties of salad and of course the dressings were from scratch too. Caprese, mini ahi tuna sliders, tuna tartar, quinoa salad, orzo pasta, bruschetta, mexican and middle eastern table full of yummy things to munch on. A lot of these items are already listed in my blog the only things that were created just for the party were the ahi tuna sliders and the wonton goat cheese bites.

For the burgers I created a roasted red pepper spread. First you need to place a few spoons of light mayo in a food processor with the following: minced garlic, paprika, pepper, flat leaf parsley. Spread mixture on either side of the mini burger buns which are vegan and can be found a trader joes for about $ 1.20 for a pack of 8 buns. To cook the tuna I simply marinated them in hoision suace, pepper and soy sauce. You don't need to marinate for too long. Then I just simply pan friend them in very little oil until cooked.

For the Wontons I sprayed some muffin trays and placed sheets of wonton wrappers in each of them. bake for about 5 minutes on 350, but stay close because they burn quick. I filled each one with a little spoon of herbed goat cheese and my home made olive tapenade.

Rosemary Chicken with Mushroom Marsala Wine Sauce

Chopped fresh rosemary, tablespoon of honey, 2 limes, paprika, oil is the marinate for the chicken. Once marinated and placed on cooking tray place some springs of rosemary on top of chicken and later removed. Bake in oven for 2 hours on 350. For the sauce first saute mushrooms in pot with some water and dry white wine, 3 cups of beef broth. Salt and pepper is added for taste. Keep cooking mushrooms until cooked. To thicken sauce and create a dairy free mixture, make a rue using water and flour and add into sauce and continue mixing until everything is broken down.

Meatballs & Potatoes Two Ways

In both of these recipes you will first need to sauté sliced white onions with oil, salt, pepper, paprika, tumeric, and cumin. I also add in some water to help onions break down. Once cooked place onions on the bottom of the tray, next add in season potatoes ( seasoning includes paprika, oil, salt, pepper, cumin) for the meatballs I season with salt, pepper, paprika, tumeric, cumin, cayeene pepper. Create some meatballs out of mixture and place meatballs on top of potatoes, Cover with foil and place in oven on 350 for 1 hour. You can remove the foil the last ten minutes of cooking.

Once cooked these meatballs were placed in tomato paste with paprika, salt, pepper, garlic powder, cayenne pepper. Flat Leaf parsley was add into the potato mixture

Chicken and Vegetable Soup

You will need to boil two chicken breast and a package of chicken necks which is like 6 pieces. Necks are inexpensive and are just used to make the broth, they can be tossed away once you're ready to serve the soup. Boil the chicken with one whole white sliced onion, 5 garlic cloves, 3 peeled whole carrots and some celery sticks. Once everything is cooked take vegetables out slice them, shred and cube chicken off the bone and remove necks. Place everything back in the soup once finished and allow to cook until everything is ready. If needed you can include one small can of chicken broth for flavor, salt and pepper as well.

Breaded Baked Sole

For this recipe you want to set up 3 stations, One station with just beaded eggs, another with flour thats mixed with paprika, salt and pepper and lastly with bread crumbs of your choice that have been mixed with fresh Flat leaf parsley. Dip your sole or any fish of choice into the egg wash then flour then back into the egg wash and finally the bread crumbs. Place all the fish on a oiled tray and place in oven on 375 for about 30 mins and flipping it once so it cooks evenly. Cooking time also depends on thickness of the fish!

Garlic and Parsley infused Mash Potatoes

On a frying pan put in a half stick of butter or margarine, 5 whole garlic cloves and a hand full of chopped flat leaf parsley. In another pot boil your potatoes of choice once they are ready mash them up and pour in liquids from the frying pan, if you're a garlic lover add in the garlic too and smash everything together! You can do this recipe with any herb of choice.

Red Quinoa Salad

First Boil the quinoa in a pot and allow to simmer until all the water has evaporated. Next Chop some red and yellow bell peppers and green onions. You want to squeeze 4 limes, the quinoa soaks up liquids so you want to make sure it has enough. A little bit of oil, salt and pepper and lastly throw in some chopped flat leaf parsley!

Tuna Tartare

For the tuna tartare you want to make sure you are using sashami grade tuna, this is the only way you can eat the tuna raw. I get my tuna from whole foods, it's a little on the pricy side about $24.00 a pound as far as fish, but it's just so yummy. Half a pound of fish is enough for 4 people to enjoy this appetizer. You can use either wonton wrappers or egg roll wrappers depending on your preference. Open the package and cut the wrappers into four squares, next you want to lightly fry them in sesame oil, make sure to flip them and fry both sides. Once fried leave the wrappers on top of a paper towel to get rid of any excess oil. Chop up tuna into small pieces and continue to chop until all the tuna is minced, add in some soy sauce, saracha, cut up green onions, salt, pepper, sesame oil, cubed avocado. Mix everything together and place into the refrigerator for 30 mins.
