Cognac and Brown Sugar Marinated Sockeye Salmon

Whenever I get the chance to buy sockeye salmon I do, it has a better flavor and color. For the marinate I mixed a tablespoon of honey, brown sugar, a small individual size of cognac, sesame oil, salt, pepper. Place fish flesh side down into the marinate for at least an hour before cooking. Create a foil bag and cook fish for 40 minutes in the oven on 350 or until cooked, depends on the thickness of the fish. 




Fish served with my dirty yellow rice with onions and tomatoes
