Whenever I get the chance to buy sockeye salmon I do, it has a better flavor and color. For the marinate I mixed a tablespoon of honey, brown sugar, a small individual size of cognac, sesame oil, salt, pepper. Place fish flesh side down into the marinate for at least an hour before cooking. Create a foil bag and cook fish for 40 minutes in the oven on 350 or until cooked, depends on the thickness of the fish.
