Moroccan Breakfast

Shakshuka

Cut up one jalepeno, one green pepper, one red pepper, half a teaspoon of cumin, a few cloves of garlic, and saute in a frying pan with some olive oil. Next open up one can of stewed whole tomatoes and add into pan. Once all the items are cooked begin to break up the tomatoes and add in one whole cut up white onion. I added in crumbled soy chorizo, but you can skip that or add in meat options. Once everything is broken down and it is almost like a sauce you can add in a few eggs cover with a lid and once the eggs are cooked you can serve with some bread. This is a very filling dish that can be served in the morning or any time of the day!

Yellow Chicken Curry

At the Asian market you can find yellow curry, Add in a few spoons of the paste, one can of coconut milk, cooked carrots and potatoes into a sauce pan. Next I used chicken breast, so I placed in the whole chicken breast that was butterflied. Once semi cooked take chicken out of pan and slice chicken and place back to pot with everything. Mix thoroughly and add in some cumin seeds. Serve with a side or sticky rice and garnish with green onions or cilantro.

Asian Spicy Beef Soup

At your local Asian store grab some beef stew seasoning. Its vegetarian and great to use for soups. Using one and a half tablespoons of the seasoning, half a teaspoon of spicy chili seasoning, sliced garlic, sliced carrots, cubed potatoes and cubed minute roast meat. Cook for 40 minutes and the soup is ready. If you would like to add noodles of your choice you can, sliced red onions, sliced green onions, sliced jalepenos.

Shabbat Dinner

For the Dinner I combined various recipes on my blog. I used the Persian Celery stew, Rice with tadig, chicken legs with roast potatoes and butternut squash cubes.

Marinate Brussels Sprouts

When people think sprouts they think flavorless green foods. However using the right seasonings you can make any greens flavorful. Wash and cut in half the sprouts, in a bowl mix together oil, salt, pepper, sirarcha, chili sauce and rice vinegar. Place in the oven on a foil tray for 45 minutes on 350. For the first 30 minutes cover the sprouts with foil.

Healthy Roasted Chick peas

Drain all the juice out of one can of chick peas. Next in a bowl mix some olive oil, cumin, salt, pepper, paprika, tumeric. Once mixed lay on a foiled cookie tray and place into the oven on 350 for 20 minutes until the peas are a bit crispy. A great healthy snack, would also be great in salads!

Breaded Sole with a lemon caper sauce

First for the sauce on the stove top I sauteed some capers, a few cubes of butter, 4 sprigs of Fresh thyme, and a few squeezed lemons.

For the fresh I used my usual bread crumbs mixed with some paprika. First coat fish into flour, next some beaten eggs and lastly in the bread crumbs. Using a large frying pan fry fish on each side for about 6 minutes or so on medium heat. You will noticed once the fish is cooked.

Underneath I placed some buttered purred mash potatoes.

Yummy Girls Dinner

Since we were having a girls night we decided to do some Moscato wine, What better to pair dairy appetizers with. A co-worker of mine brought me the largest zucchini I have ever seen in my life. I scooped out the inside and added in the rice and feta cheese mixture I created. For the mixture I first cooked a cup of rice with a few spoons of tomato sauce, fresh Thyme, sauteed onion, tomato, garlic with crumbled feta cheese. Place into the oven first just the zucchini with some oil and salt for 30 minutes on 300 and then the stuffed zucchini on 350 for another 30 minutes. The results are amazing. You can use any squash of your choice and any filling.

For the goat cheese dough bites I used a pre-made dough from Trader Joes, topped it off with some herbed goat cheese and balsamic reduced red onions. These were a favorite, the taste of the goat cheese with the sweet onions are just delicious together.

I paired this dinner with an assembled cheese plate, mozzarella balls, a large salad, my olive tapenade.

Learn how to make bread

First I used a 2 pound bag of white all purpose flour, next I added in one package of instant dry yeast, next one teaspoon of salt. Knead everything together and set the bread aside with a paper towel on top to give the dough to rise. Once it rises you can create shapes of bread of your choice. For the Topping I minced garlic, rosemary and melted margarine. Spread the mixture on top of the bread and place into the oven for 30 minutes on 350. Depending on your oven you might need to cook bread longer for brownish color to appear.

Cheese & Bread

Below you can see various cheeses as well as a rosemary and garlic infused crostini. First I rubbed garlic cloves on the bread pieces, next with a spoon I placed some oil that had been seasoned with fresh rosemary, garlic powder, salt, pepper, paprika. Place into the oven on 350 for about 6 minutes flip over for another 3 minutes.

Asiago Cheese and Garlic crostini

First rub garlic cloves with oil on the bread slices, next shred rosemary asiago cheese on top of the bread, mince the leftover garlic and place on top of bread, place into the oven for 10 minutes on 350.
