Pretzel Dogs

I actually got this recipe from a pinterest user and I just wanted to share the photos with you all, I minus the butter and used turkey dogs instead.

Chicken Pot Pie

In a large pot create a soup by adding veggies of choice, I used some carrots, celery, peas, potatoes, Chicken Cubes, Veggie stock, salt, pepper, fresh flat leaf parsley, garlic, then add a few spoons of flour to thicken soup, dump soup into tray and top off with some puff pastry dough. One box comes with two sheets so I actually made two pot pies. Brush with egg wash and Place in oven for about 45 minutes.

Acorn Squash Soup

First pick your squash of choice, I used an acorn squash, but this can be made with any type. Roast in oven for about 30 minutes then remove insides and place into pot of boiling water, add a few spoons of chicken consume, salt, pepper, and cook on stove for 20 minutes, Using a hand blender blend everything and its ready!

Acorn Squash Soup

Indian Veggie Samosas with Fresh Mint Chutney

First lets cook the filling. Peel, boil and cut potatoes, Next saute one white onion in a pot with cumin seeds and tumeric, next adding in the cubed potatoes and one can of peas. Keep cooking on low heat for about 10 minutes. Place egg roll wrapper on flat surface and fill with one spoon of mixture. The way you close the samosa does not really matter so be creative, but making sure each corner is sealed with egg wash. Bake in oven on an oiled tray for about 20 minutes on 350.

For the mint chutney place the following in blender: 1 batch of fresh mint, 2 batches of fresh cilantro, a half a jalepeno, some lemon juice.

Breakfast Sandwich

Toast your bread of choice, spread some cream cheese on both sides, add a slice of red onion, some lox, guacamole, scrambled eggs that were cooked with paprika, tumeric, cumin, onions, tomatoes. Simple, but soooo flavorful!

Breakfast Hash all in One!

First Shred skinless potatoes of your choice, I used rustic potatoes. Next season shreds with paprika, tumeric, oil salt and pepper and place in tray, Next saute some tomatoes and onions and add to mixture lastly adding some shredded spinach leaves. You can add this step at the last 10 minutes of cooking. Top off with a few eggs and place into oven on 350 for about 20 minutes or until cooked.

Salmon in the Oven

First you want to oil the tray your using or what I think is better is to foil the entire thing for easy removal. Place salmon down and top off with some oil, paprika, lemon zest, minced garlic, pepper, salt. You can place some of your favorite veggies on the sides. I used baby zucchini and crimini mushrooms. Place in the oven for about 30 minutes covered with foil and then take foil off for another 15 minutes depending on the thickness of the salmon.

BBq Eggplant Bruschetta

First salt and oil rounds of eggplant, Next place eggplant rounds on bbq and allow to cook, should take less then 10 minutes. For the toppings you can always mix it up, add or take out certain items. I used cubes of feta cheese, kalamata olives, capers, different colored heirloom tomatoes, olive oil, salt and pepper. once eggplant cools top each off with mixture! Your guest will be amazed by this beautifully colored appetizer.

Party Food!

So back in February I wanted to throw a dinner birthday event at my house. I wanted to make it intimate so I only invited a small group of friends and cooked the entire food feast. First off I had a few varieties of salad and of course the dressings were from scratch too. Caprese, mini ahi tuna sliders, tuna tartar, quinoa salad, orzo pasta, bruschetta, mexican and middle eastern table full of yummy things to munch on. A lot of these items are already listed in my blog the only things that were created just for the party were the ahi tuna sliders and the wonton goat cheese bites.

For the burgers I created a roasted red pepper spread. First you need to place a few spoons of light mayo in a food processor with the following: minced garlic, paprika, pepper, flat leaf parsley. Spread mixture on either side of the mini burger buns which are vegan and can be found a trader joes for about $ 1.20 for a pack of 8 buns. To cook the tuna I simply marinated them in hoision suace, pepper and soy sauce. You don't need to marinate for too long. Then I just simply pan friend them in very little oil until cooked.

For the Wontons I sprayed some muffin trays and placed sheets of wonton wrappers in each of them. bake for about 5 minutes on 350, but stay close because they burn quick. I filled each one with a little spoon of herbed goat cheese and my home made olive tapenade.
