I though this would be much harder to prepare, but it was one of the easiest things I ever made. In a bowl add in some chopped up roma tomatoes, cut up avocado, cilantro, olive oil, salt & pepper, cumin and paprika. Next I cut up some pita bread, placed some of mixture in the middle, closed up the bread and brushed it over with some olive oil and some of the avocado mixture as well. So easy to do! Place in the over on 350 degrees for about 30 minutes and its Ready.

Chicken Cacciatore
If you love chicken and tomatoes here is the recipe for you! On a stove top place one can of crushed tomatoes inside the pot, add in some cut up fresh tomatoes, onions and garlic. Once all of the mixture is sauteed add in some cut up button mushrooms, olive oil salt and pepper. Next I added in some fresh cut up flat leaf parsley. Wait until the mixture thickens and add in about a cup of water. Lastly add in some cut up pieces of chicken breast and leave on the stove until everything is cooked and ready to serve. Usually takes about 30 minutes or so. The pictures speak for themselves.

Healthy Side Dish for any meal
I love asparagus and I can honestly say a lot of people do as well. It's so healthy yet so delicious in flavor. For this side dish I simply placed one bunch of asparagus on a sheet of foil paper, make sure when you are preparing your asparagus that you bend the vegetable and where ever the break is thats what you will use, the rest of the stem is just hard and isn't appetizing anyways so why waste time cooking it. Next you want to drizzle some olive oil over the entire thing, cut up some fresh garlic and add that in as well, salt and pepper. Close up the foil bag and place in the over on 350 degrees for about 20 minutes!

Cucumber & tomato Salad
This is an easy salad recipe that goes well with any dish
First you want to thinly slice some persian cucumbers, next add in some cherry tomatoes, chop some flat leaf parsley. Squeeze in about 2 limes worth of juice, olive oil, salt and pepper! You can't go wrong with this salad choice.

Chinese Stir fry
So easy yet so filling. First you want to create a stir fry sauce, for the sauce I mixed in the following:
Using a little bit of each
Hoisin sauce
rice wine vinegar
sesame oil
fresh minced garlic
crushed red chili pepper
soy sauce
chili pepper
First I sauteed a a whole onion and included a few tablespoons of the sauce I made, next I added in some already boiled carrots, celery and broccoli. Continued by adding in some fresh sliced mushrooms, snow peas, baby corn and asparagus. In another frying pan I added in the remainder of the sauce and the one pound of sliced shoulder meat. Once everything is cooked I mixed in the meat and vegetables and let simmer for 15 minutes or so covered with the lid and lastly serve with some sticky white rice.
