Goat Cheese Mixed Greens Salad

Easy as 1,2,3

You will need the following ingredients in order to put together this dish. You will need a bag of mixed greens salad that is conveniently located at your local supermarket, some fresh pine nuts and some goat cheese, I used herb goat cheese, however you can use any goat cheese.

For the dressing place the following ingredients in a tupperware container and shake well:

- Lime juice
- Balsamic vinegar
-rice wine vinegar
-red wine vinegar
-olive oil
-half a teaspoon of mayonnaise
-salt + pepper
- fresh minced garlic

I first tossed the mixed greens with the vinaigrette dressing, placed the greens in the center of the platter, next I topped the mixed greens with some herbed goat cheese, Sprinkled some pine nuts on the top and lastly garnished the dish with some seasoned crackers.

Fresh Pizza Made in 30 minutes Tops

The easiest way to go is by buying a store bought raw pizza dough. Trader Joes has a great selection of raw pizza doughs in various flavors. Make sure to spread some olive oil on a clean cookie sheet. Lay out your rolled out pizza dough and place just the plain rolled out dough in the oven for about 10 or so minutes until the dough is cooked and crisped. Next I sauce the pizza with some pizza sauce, add a thin layer of cheese and start by topping off my various veggies. I first did a layer of onions, tomatoes, bell peppers, fresh basil, green olives and another layer of cheese.

It's a great idea to use different types of cheeses and lastly drizzle some olive oil over the entire pizza. Bake in the oven on high heat for about 20 minutes. The results speak for themselves!

Steak With Cilantro & Garlic infused Mash Potatoes

For the mash potatoes I wanted to switch things up and try something new. In a food processor process some cilantro, garlic and oil until completely processed into a thick liquid. Next you want to boil your potatoes of choice in a pot, once boiled drain pot, but leave about a quarter cup of starchy water in the pot. Using a fork or hand masher, mash up all the water and potatoes and add the cilantro mixture. Leave the mash potatoes on the stove for about ten minutes so the flavors soak in and make sure to add salt and pepper to taste.

For the Steak I used a one pound piece of london broil since its a very soft meat. Using any type of deep frying pan I first seared the piece of meat with some oil, salt + pepper and flour. Make sure to sear meat on both sides. I next added in some cut up onions and a half bottle of red wine. Leave everything on the stove until the wine becomes a thick sauce. Occasionally flip over the meat and cover with a lid. Once cooked slice meat and serve. Dress the leftover sauce over the meat when serving.

For the snow peas I simply cooked them with some oil, salt + pepper, dash of soy sauce and a tablespoon of red sauce.

Delicious Healthy Lunch Combo!

Here are the directions for the Shirazi Salad:

You want to chop the following ingredients:

onions
tomatoes
cucumbers

After all of your ingredients are chopped into cubes you want to add in some lemon or lime juice, olive oil and a spoon full of dried mint, if you choose to use fresh mint make sure to finely chop the mint for best result. Add in Salt + pepper according to taste.

For the soup you want to first sauté one whole onion, spoon full of minced garlic, cubed tomatoes and some celery. After the ingredients are translucent you want to add in half a pot of water. Next add in your vegetables of choice. I used asparagus, zucchini, celery, potatoes, broccoli, squash and carrots. After I added in a half of a small can of tomato paste, teaspoon of olive oil, salt + pepper. I chose to add in some couscous pasta, but you can use any type of pasta or not.

For the Croutons you can use any old bread you have in your pantry. I used ciabatta bread and cubed a few slices of it and mixed in some olive oil, oregano, paprika, tumeric, salt + pepper, and a touch of cayenne pepper.

Ra Sushi!

Ra sushi is one of my favorite sushi restaurant. I discovered it while I was at school in San Diego and when I moved back home I was annoyed that I would not be able to visit and enjoy my favorite treats. This restaurant is located in many various cities and I found one that is located in Torrance. I mean a 30 minute drive just for some sushi, for me its worth it. They have great food, great atmosphere and an amazing happy hour thats 6 days a week.

Kosher Shabu!

Being Kosher I was never able to try this delicious manner of cooking. Shabu is a Japanese culinary dish which descended from the Mongolian tradition of nabemono, or 'one pot' cooking. In traditional shabu shabu, thin slices of beef are placed in a communal pot of boiling water and swished back and forth until cooked. Vegetables such as mushrooms, cabbage, watercress and spring chrysanthemums are also boiled briefly and dipped in various sauces.

I put together some vegetables that would work well with this dish, carrots, Napa cabbage, enoki mushrooms. Next I processed garlic and onion. You can always sprinkle some cilantro and green onions on your soup. For the meat you want to freeze it the night before and thinly slice it. For the broths you can choose any kind. I used a beef broth for one pot, mushroom for another and lastly made a spicy soup. For this recipe you can go any way with whatever you choose to make. You can add rice or various types of noodles to your soup. As far as the sauces go, I made a ginger sauce using lime juice, sesame oil and some soy sauce. You can make various sauces based on what you like best.
